Welcome to the web-site of Food Colloids 2008, the twelfth in the series of biennal European conferences dedicated to the area of food colloids.
The conference has been concerned with fundamental and applied aspects of food dispersions, emulsions, foams and gels.

The conference has been hosted by the Polymers, Colloids and Interfaces Group at the University of Le Mans, and co-organized by the Biopolymers, Interactions and Assemblies Laboratory - INRA Nantes and INSERM U646 - University of Angers.

Publication

Participants  have the possibility to submit their contribution for a special issue of Food Hydrocolloids.
Manuscripts must be submitted before the 31st of May 2008 to http://ees/elsevier.com/foohyd/.
"Special Issue : Food Colloids 2008" should be selected as the article type.
The delivery deadline for complete manuscripts is 31st May 2008.
