- Perennial plant with a long stem (0.8 to 1 m) terminating in a rosette of leaves. It has other leaves under which develop auxilliary buds that are called sprouts and which are consumed as a cooked vegetable (*) .
- The north of France and the the countries of Benelux are the primary producers.
- There are many varieties; the more productive and more uniform hybrids are replacing more traditional varieties.
- Typically planting occurs in nurseries during spring, then the plants are replanted in open fields. The plants are topped, that is the terminal bud is suppressed, which stops the stem from growing and permits more uniform maturation of the buds. The sprouts are harvested at a size of 2 to 3 cm around October-December.
