Cauliflower


[R] Brassica oleracea L. convar. Botrytis L. (Brassicaceae).
Fr: Chou-fleur; Ge: Blumenkohl; Sp: Coliflor; It: Cavolfiore; Pt: Couve-flor.

- The inflorescence, called a head, is consumed raw or cooked (*) .
- The principal European producers are Italy and France.
- Annual cauliflowers, produced in the year they are sown, are differentiated from cauliflowers with a biennial cycle, or broccoli (var. italica Plenck) sown in summer and harvested the following year.
- There are many different varieties, sown at different times, permitting a prolonged production.
- Generally, it is sown in nurseries, then transplanted under shelter or in the open, depending on the variety and season. Harvesting occurs 5 to 8 months after sowing, longer in the case of broccoli.

- Diseases: those of cabbage and other brassicas.
