Résumé : L'économie des produits de qualité et d'origine (Origin Labelled Products) apparaît aujourd'hui comme un champ de recherche légitime et particulièrement fécond. Ce fait apparaît comme marquant, après les séminaires INRA de Toulouse en 1995, celui de l'EAAE (European Association of Agricultural Economists) à Parme en 1997 et ceux de la SFER (Clermont-Ferrand en 1999 et Paris en 2000). C'est encourageant pour les nombreux praticiens du secteur qui suivent ces travaux et les aident. Ce résultat est aussi à mettre à l'actif de la Communauté européenne, qui a su anticiper et orienter ses Programmes Cadres dans la bonne direction et aux sociétés savantes, dont l'Association Européenne des Économistes Agricoles, qui a patronné ce 67e séminaire international, dont ce document constitue les actes. Les initiatives de l'Union européenne en matière de protections géographiques (Appellations d'Origine Protégées et Indications Géographiques Protégées) et leur impact sur le développement agricole et la protection des consommateurs posent en effet d'importantes questions de recherche en matière d'économie et de gestion des entreprises, des filières et de territoires, dans un contexte général de globalisation des économies.
Ce séminaire concernait aussi bien les aspects territoriaux que sectoriels. Les communications présentées ont trouvé leur place dans quatre ateliers : 1. Attentes des consommateurs et comportements envers les produits ; 2. Économie spatiale et produits ; 3. Économie de la filière : marchés et coordination, stratégies et gestion ; 4. Accords locaux et globaux sur la qualité et l'origine.
La conclusion essentielle des travaux met en évidence l'importance croissante de la coordination et de l'apprentissage dans la gestion des systèmes : coordination pour produire de la confiance, contrats, fonctionnement ou émergence des conventions qui servent de cadre aux actions. Ces thèmes doivent être vus à la fois sous un angle statique (description et évaluation du fonctionne-ment des systèmes d'acteurs, des territoires, des normes et du marché) et sous un angle dynamique (apprentissage collectif, distribution du savoir dans les systèmes d'acteurs, émergence de partenariats efficaces et équitables, émergences de conventions, apparition de nouveaux modes de consommation et de relations entre consommateurs et producteurs, etc.).

Summary : Following the INRA conferences at Toulouse in 1995, the EAAE (European Association of Agricultural Economists) conference at Parma in 1997 and the SFER conferences (Clermont-Ferrand 1999 and Paris 2000), the economics of origin labelled products has proved itself as a justified and particularly fruitful field of research. This is an encouraging development for the many participants in the sector who follow and help with this research. It is also a result of the direction of the Programmes Cadres by the European community, and of academic bodies like the EAAE that hosted the 67th international conference, the proceedings of which are presented in this document. Initiatives taken by the European Union (Protected Designation of Origin and Protected Geographical Indicator labels) and their effect on agricultural development and consumer protection are important subjects of research influencing the economics and management of businesses, supply chains and regions within the general context of economic globalisation.
The conference examined regional (or "territorial") as well as economic sector issues, with presentations made at one of four workshops : 1. Consumer expectations and purchasing of origin-labelled products ; 2. Spatial economics and origin-labelled products ; 3. Economics of the supply chain: markets and co-ordination, firm strategies and management ; 4. Local and global agreements on quality and origin.
The main conclusion of these studies underlined the growing importance of effective coordination and training in producing the confidence, contracts and agreements that form a suitable framework for action. These issues need to be understood from both a static (description and evaluation of the system of participants, regions, norms and markets) and a dynamic point of view (collective training, knowledge sharing among participants, the emergence of effective and fair partnerships and agreements, the development of new types of consumption and of new relationships between consumers and producers, etc.).
